The only reason Stefan is remaining in Mystic Falls is not to protect Elena.
Its to make sure no one gets any funny ideas about turning her into a Vampire. Everyone in the show knows Damon will protect Elena to no end, but we also know that one of the only solutions to the “blood” problem is if she goes Vampy.
